A truffle is the fruiting body of a subterranean fungus, they add a touch of luxury to any dish with their nutty earthy flavor and deep musky aroma.
The Canterbury grown Périgord black truffles are in season from as early as May but will be at their best through June, July and into early August.
By mid-September the harvest is complete.
Sassy's Truffle Products will be available at local markets, Riverside Collective and online in limited supply.
